Pork Tenderloin with Tomato, Pepper, Ginger & Apple Medley

Pork Fillet Tenderloin is extremely tender if cooked correctly and offers a tasty cut of pork that the whole family will enjoy. Very economical to buy from most supermarkets, tenderloin is easy to cook at home and can be varied with accompaniments including our Tomato, Pepper, Ginger & Apple Medley.

  • 1/2 kilogram British Pork Fillet Tenderloin
  • Olive oil
  • Modena Vinegar
  • Paprika
  • Rosemary


Step 1

In a large non-stick frying pan over a high heat with 4 tsp olive oil, sear the pork. (Cook on all 4 sides until lightly brown).

Step 2

Wrap the pork fillet in the kitchen foil, adding 3 tablespoons of Modena vinegar, 1/2 teaspoon Paprika, 2 springs of fresh chopped Rosemary and a drizzle of olive oil over the top.

Step 3

Place the wrapped tenderloin in the top of the oven in an oven proof dish or tray for 40 minutes at 180 degerees for fan assisted ovens and 190 degrees for non fan-assisted ovens.

Step 4

Once cooked, allow to sit for 10 minutes still wrapped in the foil.

Step 5

Served with the Medley mixture or vegetables of your choice in a pre-heated oven proof dish.
