Basic Pasta Dough

This basic pasta dough recipe can be used as the basis for homemade lasagne sheets, tagliatelle, cannelloni or similar pasta. We use it in our tasty Beef Lasagne Recipe which is featured on the website, using a Kenwood Multi Pro Food Processor to prepare the dough mixture and a traditional Pasta Maker to roll the lasagne sheets into shape on the thinnest roller setting.

Ingredients

  • 300 gms 00 Grade Flour
  • 3 Eggs – Medium to Large
  • 30ml Olive Oil
  • Flour to dust for rolling

Method

Step 1

Fit the Knife Blade to your Food Processor and place the flour, eggs and olive oil into the mixing bowl.

Step 2

Switch on the processor and mix until large crumbs start to form.

Step 3

Remove the dough mix from the bowl and transfer to a clean, lightly floured work surface. Knead for approximately 2 minutes to produce an even consistency.

Step 4

Wrap the dough in clingfilm and place in the fridge for 20 minutes.

Step 5

To prepare the pasta for your recipe, roll it out using a rolling pin to a thickness that will then fit into the largest opening of your Pasta Machine.

Step 6

Pass your pasta dough through the Pasta Machine approximately 10 times, reducing the thickness on the machine each time to create a nice thin pasta sheet.

Step 7

Cut your pasta sheets to the required size for your recipe – either as large sheets for lasagne, rectangles for cannelloni or ribbon strips for tagliatelle.

Step 8

Follow your recipe’s instructions for adding the pasta dough.
