This lovely home-cooked Fish Pie recipe has all the flavours combined with a tasty topping. You can vary and mix the fish depending on availability. Cod Loin is ideal and any flaky fish such as salmon works well with some large prawns mixed in for extra taste.
The taste can be varied with either a Parsley or Onion Sauce.
You ideally want to end up with 3/4 inch of mashed potato on the top and extra vegetables such as courgettes can be added if you want to vary the recipe.

Ingredients
- 1 to 1.5 lb Fresh Fish – whole or pieces – bones removed – cod, prawns, salmon
- 2 to 3 Peppers – sliced
- 2.5 lb Potatoes – good quality ones are better suitable for mashing
- 2 medium or 1 large Onion
- 1.5 pints of Parsley or Onion Sauce
Method
Step 1
Rapidly cook the fish in a hot frying pan for 3-4 minutes to brown (not cook)
Step 2
Flash fry 2-3 sliced peppers and onions
Step 3
Optional – add courgettes, aubergines or mushrooms if required
Step 4
Once the fish and vegetables are browned in the frying pan, place them all into an overproof dish
Step 5
Cover the fish and vegetables with either an Onion or Parsley Sauce
Step 6
Cover with enough mashed potato to cover the dish 1-2 inches deep
Step 7
Optional – add grated cheddar cheese on top if required (around 1-2 oz)
Step 8
Place the dish in the oven at 180 for 25 minutes then turn the oven up to 220 degrees for 10 minutes
Step 9
Keep an eye on the dish near the end, you want a lovely browned topping rather than a burn’t one!
