Fresh Mint Sauce

This simple Mint Sauce recipe is quick and easy to prepare and uses fresh spearmint together with a few basic store cupboard ingredients.  The perfect partner with slow roasted leg of Lamb.

Best prepared around 2 hours in advance which allows the vinegar to soften the leaves.

Spearmint is easy to grow at home.

Serves 2

Ingredients

  • Approx 25 leaves of fresh Spearmint
  • 1½ tsp Demerara Sugar
  • Approx 10-20 ml Malt Vinegar to taste

Method

Step 1 – Pick off the leaves individually and discard the stalks

Step 2 – Wash the mint leaves then roughly chop them, adding the Demerara sugar as you cut to blend in the sugar with the mint

Step 3 – Place the chopped mint and sugar into a small serving bowl

Step 4 – Add approximately 10-20ml Malt Vinegar and mix together. It should be enough to cover the mint

Step 5 – Chill in the fridge until ready to serve
